Chocolate Chip Banana Oatmeal Pancakes

Hi everyone! This is my very first recipe blog post. I love cooking, baking, experimenting with recipes, you name it. I have been challenging myself to remake some of my favorite recipes into healthier versions, using wholesome ingredients. I thought breakfast would be a good place to start. I normally crave sweet/ bready foods in the morning like pancakes, bagels, muffins, etc. But I know these can make me feel heavy throughout the day. By changing up some of the ingredients, I can fuel my body with better nutrients while not depriving myself of the foods I love!

 

Today I am sharing my personal recipe for my Chocolate Chip Banana Oat Pancakes. It is one of my favorites and it is super easy to make! Everything is thrown into a blender or food processor and in just a few minutes you will have a yummy stack of pancakes that will get your morning started right! They have the same consistency as regular pancakes but NO HIDDEN INGREDIENTS, so you don’t have to feel guilty about having a 2…. or 6!

Heat a skillet or pan to a medium heat. ;;Step 2. In a small bowl combine oats, cinnamon, baking powder, baking soda and salt and set aside.;;Step 3. Using a blender or food processor blend together the bananas, honey and almond milk until smooth. ;;Step 4. Add the dry ingredients to the wet ingredients while still in the food processor and blend together.;;Step 5. Add a small amount of coconut oil onto the skillet and then pour the batter over the oil. (This step is optional, but I find that the coconut helps to keep the batter from sticking to the pan).;;Step 6. Place the chocolate chips on top of the batter and gently press down with a spoon or spatula. Let them cook for about 2-3 minutes on each side.;;Step 7. Time for toppings! Add some of your favorite toppings like extra banana slices, extra chocolate chips. I like to spread a little bit of peanut butter on mine, and of course you can’t forget that drizzle of honey!!
